Europe’s awakening sweet tooth during the 19th century made Trinidad one of the richest towns in Cuba and had the Spanish sugar plantation owners rolling in money. Now their mansions still stand and give Trinidad an old colonial flavour that, together with the African influences inherited from the plantation slaves, creates an intoxicating mix.
